Prickly Pear Vinaigrette
- Juice from 1 lime
- 2 prickly pear fruits, chopped (or use about a cup of prickly pear juice)
- 1/3 c. extra light olive oil or salad oil
- 2 Tbsps. local honey (may need to warm with prickly pear juice to mix well)
- Salt, pepper, to taste
Combine all ingredients, except honey, in a blender or small food processor and blend until incorporated. Strain through a fine mesh sieve to remove the prickly pear seeds (which are edible but can be too crunchy). Return to processor and add honey. Mix well.
